It’s Monday Night…

It’s Monday night and the kids are absolutely bananas ( now break out in this song to relieve tension…Sh** is BANANAS… B.A.N.A.N.A.S) I’ve got to get dinner on the table while playing referee/feeding the baby/dodging flying objects/stepping on said objects. We’ve all been there right?! Here is my go to dinner when I need a quick, yet nutritious dinner! I am all about the hacks so here is my Trader Joe’s cauliflower rice. I always have a giant bowl of this in the fridge so we can add eggs on top for breakfast or some protein for dinner. Enjoy!

Cauliflower Rice with Peppers

Instructions
  1. Heat oil in large pan. Dice frozen peppers and add to pan. Cook down for 5 minutes.
  2. Add rcied caulflower and seasoning to peppers and cook until Cauliflower becomes soft. Remove from heat and enjoy.
Recipe Notes

*If you want to make less I suggest using 1 bag of cauliflower and use 1/2 bag of peppers.
